I'm not ashamed to admit that from-scratch brownies have always been just too annoying for me to deal with. I swear by boxed mixes, and I stand by that decision. But, sometimes you can't make do with the boxed mix. In the case of mixing alcohol in, you have to go with a scratch recipe. Fortunately, there are plenty of easy scratch brownie recipes, including this one that combines chocolate and beer!
Since my main goal in life is to make people like me (and, I mean, achieve success and all that other stuff...), I find myself baking for others all the time. My coworkers love beer - love beer, so a beer brownie is always a big hit. Last time I made stout brownies, I used semisweet chocolate. My coworkers loved them, and I hated them. This time, I went with milk chocolate. If you prefer dark chocolate, feel free to sub it in! Likewise, if Guinness isn't your thing, use any stout your heart desires.
These brownies get a little extra addition with a beer ganache on top. If you've never made ganache, it's pretty simple. I just heated up heavy cream (about 1/4 cup) and added it to 1/4 cup of milk chocolate chips, plus two Hershey's bars. Then, I added about two tablespoons of Guinness, and mixed it all together until it was a smooth consistency. Spread the ganache on top, and toss the pan in the fridge so the chocolate firms up.
